La cittadina di Aigues Mortes è un vero gioiello, completamente racchiusa dalle mura e perfettamente conservata. A differenza del classico villaggio occitano fortificato e abbarbicato sulle rocce, questo paesino si sviluppa in piano, circondato da saline e zone palustri. Da qui, nel 1248, partirono le flotte francesi per dare vita alla settima crociata in Terra Santa. Questa meravigliosa cittadella fortificata conserva un giro di bastioni monumentali, lunghi 1,6 km che si possono percorrere a piedi per intero. Aigues Mortes si trova alle porte della Camargue e ne condivide l'inconfondibile paesaggio selvaggio, la cultura gitana e le attività legate alle mandrie e agli allevamenti di tori e cavalli.
