Il Castello di Ouchy fu costruito per la prima volta dal vescovo di Losanna come torre di avvistamento sulle rive del Lago Lemano intorno al 1170. Un secolo dopo fu ricostruito e trasformato in una residenza fortificata per i vescovi, in particolare da Guillaume de Varax. Fu anche utilizzato come prigione. Il castello fu abbandonato e la sua torre ridotta in cenere nel 1609. Il Cantone di Vaud lo recuperò dopo la partenza dei Bernesi e vendette parte del terreno all'imprenditore Jean-Jacques Mercier nel 1885. Il nuovo proprietario trasformò radicalmente il castello demolendo le rovine e i vecchi edifici, lasciando solo la torre. Il castello fu ricostruito in stile neogotico tra il 1889 e il 1893 e trasformato in albergo. In questo albergo fu firmato il trattato di Ouchy, del 1912, che sancì la fine della guerra italo-turca e riconobbe all'Italia il possesso delle province Libiche e il Dodecaneso e fu anche sede di colloqui diplomatici in vista della firma del più noto Trattato di Losanna del 1923, che segnò la fine dell'Impero Ottomano e stabilì i nuovi confini della Penisola Balcanica e del Medio Oriente. Un castello, dunque, di grande importanza storica.
