Sempre in Basilicata vi segnalo questa simpatica e singolare escursione. I Palmenti sono costruzioni semi-ipogee scavate nella roccia arenaria e sono serviti fino agli anni '60 come luogo per la pigiatura dell'uva e la fermentazione del mosto. I primi palmenti probabilmente videro la luce nell'800. Fino alla fine degli anni 60 ogni famiglia ne possedeva uno e, pigiando l'uva con i piedi, produceva il proprio vino. Nel loro atrio troviamo la vasca per la pigiatura dell'uva posta a livello terra o in posizione un po' sopraelevata rispetto alle altre vasche. Accanto vi è la vasca di fermentazione, costruita nel tufo e posta un po' più sotto. Vicino alla vasca di fermentazione è costruito un canale per lo scarico del vino in corrispondenza del quale si trova una buca spaziosa (palm'ndédd) per riempire i barili per la svinatura.
