La costruzione dell'Abbazia, che secondo la leggenda venne edificata dai monaci stessi, risale al 1319 come eremitaggio mistico voluto dai nobili Bernardo (Giovanni) Tolomei, Patrizio Patrizi e Ambrogio Piccolomini che avevano adottato la regola benedettina. La nuova Congregazione Olivetana crebbe in fretta e la nuova regola che favoriva oltre al lavoro nei campi il lavoro artistico e librario venne approvata da papa Clemente VI nel 1344. L'Abbazia rispecchia l'impostazione classica dei complessi benedettini costituiti da una chiesa, un chiostro grande ed uno o più chiostri piccoli, un'aula capitolare, un refettorio ed una grande biblioteca. Tutti gli ambienti sono affrescati con opere di grande interesse artistico ed i monaci realizzano ancor oggi con tecniche antiche, pozioni d'erbe medicinali, liquori e ceramiche.
