Le lumache appartengono alla famiglia dei gasteropodi, e sono largamente utillizzate sia nella cucina italiana che in quella francese. Vederle al mercato o nelle vetrine di alcuni bistrot parigini, mi fa tornare indietro a nostalgici ricordi della mia infanzia, quando, munita di secchiello, seguivo i contadini che, nei terreni dei miei nonni, aravano i campi per prepararli alla semina. Ricordo anche alcune giornate piovose, noi bambini aspettavamo che spiovesse per andare a cercar lumache sui muretti e sui terreni. Alla raccolta, seguiva poi una lunga preparazione: le mie zie le schiumavano, le chiudevano in un recipiente a chiusura ermetica e, solo dopo un giorno e qualche volta anche di più, procedevano a più lavaggi, fino al momento di metterle in padelle per succulente ricette. Allora le lumache si mangiavano solo nelle case dei contadini, facevano parte della cucina dei “poveri”, oggi sono diventate un alimento da grandi chef. Molto famose le lumache (l'escargot) alla bourguignonne ottime in tutti i bistrot parigini e alla pizzaiola e in tanti altri modi nella cucina e nei ristoranti di casa nostra.
