Il bruco (o più giustamente baco, parlando di lepidotteri) si nutre di Apiaceae e quindi principalmente di finocchio e carota, ma anche la ruta è molto ricercata. Il bruco compie diverse mute e nelle sue ultime fasi si presenta verde con anelli neri e punti arancioni. Nei primi stadi invece è nero con macchie bianche, apparendo all'occhio disattento una semplice deiezione di uccello. Questo tipo di mimetismo è una particolare strategia definita come criptismo, nella quale l'individuo assume forme e colore dell'ambiente o di parte di esso. In questo caso il bruco non si nasconde ma crea un'illusione al possibile predatore. Il bruco del macaone presenta anche una difesa attiva con un organo estroflessibile posto sul capo, l'osmeterio che emette acido butirrico.
