Hyssopus è il nome usato da Ippocrate derivato dall'ebraico ezob = “erba sacra”. È un termine molto antico frequentemente nominato nel Vecchio Testamento (Esodo 12,22), che narra come fu usata come pennello per segnare col sangue d'agnello le porte delle famiglie israelitiche che l'angelo distruttore doveva risparmiare in occasione dell'esodo dall'Egitto (la 1° Pasqua). In Levitico 14 si parla quattro volte del'issopo per l'aspersione del sangue da parte del sommo sacerdote sull'altare. Tradizionalmente la pianta d'issopo era usata in rametti riuniti come aspersorio e utilizzata nelle purificazioni. (Nel Salmo 51, conosciuto come Miserere, al verso 9 si dice: “Aspergimi con rami d'issopo e sarò puro”). Questa pianta è stata citata in testi del VII secolo, e fu ampiamente usata in cosmetica. Non si ha la certezza che la specie conosciuta e apprezzata da Re Salomone sia proprio l'Hyssopus officinalis. Già nel XVIII secolo se ne conoscevano varietà diverse per il colore dei fiori e la forma delle foglie. In altri tempi, si usava per curare l'asma, le affezioni bronchiali e polmonari croniche. In Persia l'acqua distillata ottenuta dalla pianta viene usata come cosmetico, in quanto ha la fama di rendere lucente l'incarnato. Il miele di issopo è apprezzato per il gusto delicato anche se intensamente profumato. Oggigiorno, dalle foglie, viene estratto un olio, usato in profumeria e distilleria. Scatto effettuato in Val di Fassa nel Luglio 2016.
