Questa foto scattata il giorno prima del secondo compleanno di mia figlia qualche giorno addietro mostra 4 generazioni di donne al lavoro per realizzare uno dei piatti tipici della mia zona.... "I maccarruna" per l'appunto.... Null'altro che una pasta fresca della tradizione fatta a mano utilizzando dei fili di un'erba selvatica essiccata (u juncu dalle nostre parti) sui quali viene stirato il pezzetto di pasta che la nonna con sapienza calibra tra le sue non più agevoli mani. la pasta viene allungata fino ad ottenere un filo della grossezza desiderata e a quel punto si estrae il giunco che lascia all'interno del maccherone il forellino che permetterà all'acqua in pentola di cuocerlo anche internamente... una pasta deliziosa che tradizionalmente si condisce con un buon sugo di carne mista e a chi va con una bella spolverata di ricotta salata essiccata al sole o passata nel forno a legna più volte dopo magari la cottura del pane. Un immagine a cui mi sono subito affezionato e per l'affetto che mi lega a queste 4 donne e per quello che rappresenta nel trasferimento delle tradizioni alle generazioni che si susseguono e che ho piacere di condividere con voi aldilà delle sicuramente svariate pecche tecniche di realizzazione e di pp che potrete riscontrarvi.
