Hello Roberto, I try to explain in a short (according to my knowledge:-D) what it is, I assumed the "short" as the concept of EV in photography is a rather broad topic that I'm sure you can gain more complete with readings more techniques as they surely will be my brief explanationthat follows. ;-)
So .... EV is the acronym stands for "exposition value" ie exposure value.
The exposure of the machine itself you already know that is an exposure assessment (basic grayish) and is at a distance.
This exposure is not always correct .... for example, the reflected light of a snowy landscape requires that we adopt the exposure to compensate for different brightness that "bounces" the snow and "impressive" in the sensor.
