Sempre in Basilicata vi segnalo questa simpatica e singolare escursione. I Palmenti sono costruzioni semi-ipogee scavate nella roccia arenaria e sono serviti fino agli anni '60 come luogo per la pigiatura dell'uva e la fermentazione del mosto. I primi palmenti probabilmente videro la luce nell'800. Fino alla fine degli anni 60 ogni famiglia ne possedeva uno e, pigiando l'uva con i piedi, produceva il proprio vino. Nel loro atrio troviamo la vasca per la pigiatura dell'uva posta a livello terra o in posizione un po' sopraelevata rispetto alle altre vasche. Accanto vi è la vasca di fermentazione, costruita nel tufo e posta un po' più sotto. Vicino alla vasca di fermentazione è costruito un canale per lo scarico del vino in corrispondenza del quale si trova una buca spaziosa (palm'ndédd) per riempire i barili per la svinatura. Nella parte superiore della porta, in una nicchia, era posta una candela con la funzione di far esalare l'anidride carbonica derivante dal processo di fermentazione. “Et però credo che molta felicità sia agli homini che nascono dove si trovano i vini boni” Leonardo Da Vinci
