Delizioso borgo medievale situato nel cuore dei famosi vigneti di Bordeaux, Saint-Emilion è unica nel suo genere per l'importanza delle sue proprietà vinicole, la qualità dei suoi vini e la maestosità della sua architettura e dei suoi monumenti. Situata a 40 minuti da Bordeaux e ricca di storia, appollaiata su un promontorio roccioso, Saint-Emilion e i suoi vigneti traggono la loro originalità dalla pietra calcarea che ne ha plasmato l'identità. La leggenda narra che a metà dell'VIII secolo un monaco bretone, originario di Vannes e chiamato Emilion, si rifugiò in un luogo di ritiro chiamato Ascumbas (antico nome della città di Saint-Emilion). Dal IX al XIX secolo si è continuato ad estrarre la roccia per costruire il complesso architettonico della città; ne è prova la presenza di 200 km di gallerie sotterranee che hanno fornito la pietra calcarea necessaria per la costruzione di diversi edifici nella regione, in particolare a Bordeaux. La pietra calcarea è onnipresente e fornisce un terreno eccezionale per i vigneti di Saint-Emilion. Nel 1999, e per la prima volta al mondo, le vigne di Saint-Emilion furono dichiarate Patrimonio Mondiale dell'Umanità dall'UNESCO, che considera Saint-Emilion "un notevole esempio di paesaggio viticolo storico rimasto intatto" e che continua la sua attività anche oggi.
