Il Buttero è un pastore a cavallo tipico della Maremma Toscana e Laziale, e più in generale un cavaliere abile nella “monta da lavoro”. L'origine e l'essenza dei Butteri, si perde nella Toscana selvaggia e inospitale degli Etruschi ed è giunta ai giorni nostri tramandandosi generazione dopo generazione in luoghi specifici della Maremma. Il Buttero era ed è il simbolo e l'anima della Maremma, terra di campagne sconfinate e mandrie di Buoi.
