Tortelloni ripieni di cime di ortiche e ricotta con condimento allo speck. L'utilizzo delle cime delle ortiche è oggi giorno entrato nel dimenticatonio ma... personalmente... lo consiglio per la sua bontà. I tortelloni presenti nella fotografia sono di pasta all'uovo e sono stati riempiti con cime di ortiche tagliuzzate e ricotta e poi conditi con un insieme di aglio, cipolla e pomodoro cotti... a cui nel nostro caso sono stati aggiunti dei pezzetti di speck. Le cime delle ortiche erano... e sono tutt'ora... un'ottima alternativa ai classici spinaci. Tali piante sono omnipresenti nelle campagne dove crescono un po' ovunque. Vanno raccolte solo le cime in quanto sono la parte tenera della pianta utilizzando dei guanti e poi bollite... perdendo dopo tale trattamento il loro potere urticante. Essendo in prossimità della Pasqua è stato aggiunto un uovo sodo per riportare in vita un'antica tradizione che... a volte... faceva aggiungere un uovo al cibo nei giorni prossimi alla Pasqua per rendere più festosa la ricorrenza senza dover ricorrere ad importanti spese... che poi l'uovo poteva essere prelevato direttamente dal pollaio... per chi ne possedeva uno. Questa immagine è stata pubblicata a scopo documentativo... quindi senza alcuna pretesa di essere giudicata dal punto di vista artistico.
