I paùli della Giara di Gesturi regno dei cavallini sardi sono lievi depressioni del terreno nelle quali l'acqua piovana si raccoglie e si conserva per gran parte dell'anno; i principali sulla Giara sono circa una trentina e occupano una superficie di 120 ettari, pari a circa il 2 percento dell'intero territorio della Giara. Si trovano in tutto l'altopiano, in particolare presso i rilievi di Monte Zepparedda (609 m) e di Zéppara Manna (580 m). I paùli più grandi si chiamano entrambi Paùli Maiori e ricadono l'uno nel comune di Genoni e l'altro in quello di Tuili (quest'ultimo, con il suo metro e trenta di profondità, può dirsi a buon diritto il maggiore dell'altopiano). La tradizione locale ha attribuito un nome solo ad una ventina tra i paùli del tavolato: tra questi merita ricordare Paùli Tramatzu, Paùli Cerrobica, Paùli Perdosu e Paùli s'Ala de Mengianu. La temperatura dell'acqua nei diversi stagni varia stagionalmente da zero a oltre trenta gradi centigradi, la salinità si conserva invece costante con l'evaporazione. Il fondo presenta caratteristiche diverse nei diversi casi: alcuni paùli hanno fondo pietroso, altri limaccioso. Questi ambienti, importantissimi per la vita di numerose specie animali e vegetali, sono considerati raccolte d'acqua di tipo oligotrofico, nonostante la scarsa profondità e la presenza delle sostanze organiche dovute al pascolo del bestiame. Per le loro caratteristiche peculiari, per la ricchezza delle specie che vi si trovano, li si può considerare ambienti naturali di grande rilievo, riferibili all'habitat prioritario 3170* - “Stagni temporanei mediterranei” della Rete Natura 2000. In primavera, alla straordinaria fioritura dei ranuncoli acquatici che imbianca gli specchi d'acqua sparsi sul tavolato della Giara, si unisce lo spettacolo dei celebri cavallini, (Equus caballus giarae) che di questi vegetali sono ghiotti e si possono osservare presso le zone umide dell'altopiano.
