La parrocchiale di San Lorenzo a tre navate, fu realizzata tramite la trasformazione di un precedente edificio sacro, che venne riedificato in chiesa parrocchiale dopo le invasioni e devastazioni subite da Cavour da parte degli Ugonotti a fine cinquecento e, circa un secolo più tardi, ad opera di quelle dell'esercito francese comandato dal generale Catinat. La nuova Chiesa parrocchiale, che contava cinque navate con sei altari laterali ed era dedicata alla Concezione, venne poi ancora modificata nell'aspetto attuale, in stile basilicale ed a tre navate, con i nuovi restauri iniziati nell'anno 1872. Venne infine consacrata nel 1874 a S. Lorenzo Martire, così come lo era l'antica parrocchiale extra-muros. Grazie a Monsignor Teologo Giovanni Maria Vignolo, parroco locale, agli illustri ingegneri Amedeo Peyron e Bartolomeo Barberis, ai contributi versati dal Comune (stanziò in quel periodo la cifra di L. 8.000 per i restauri) e alle generose offerte dei cavouresi, la Chiesa venne quasi completamente rinnovata e trasformata in stile basilicale; le cinque navate furono ridotte a tre, avendone formata una sola delle tre intermedie prima esistenti; le altre due laterali furono lasciate intatte, tranne che nelle decorazioni e negli altari. Cosi restaurata misura m. 40 di lunghezza, di cui 14 m. compresi dal presbiterio e coro, 26 m. circa di larghezza e 12 m. di altezza. All'interno della Chiesa quello che colpisce l'occhio e il prezioso soffitto di legno ornato con grandi e piccoli rosoni dorati (su disegno della Basilica di S. Maria Maggiore di Roma), opera del celebre falegname Rosso Filippo. I rosoni del soffitto sono opera dello svizzero Cantone. Il progetto dell'ing. Comm. Amedeo Peyron. Nel 1984 vennero restaurati i 55 cassettoni barocchi: ripuliti, spruzzati di sostanze antitarlo e sostituita la doratura deperita. Dalla maestosità e ricchezza di questo soffitto a fiorami di legno, filettato in oro, lo sguardo si posa sui capitelli dorati delle colonne e sulle numerose lesene. L'altare maggiore, in marmo policromo pregiato, fu regalo di Monsignor Vignolo e venne copiato dal disegno dell'altar maggiore della Chiesa dell'Annunziata di Genova dal valido scultore ligure Montarsolo, autore anche degli altari consacrati a Maria Vergine con Bambino e a S. Luigi. È collocato in un vano di quattordici metri ricavato al fondo della navata centrale e sormontato da un arco sul quale e collocato un pregevole crocifisso. Sopra 1'altare maggiore si può ammirare nella cupola ovale la gloria del martire S. Lorenzo, affresco di Luigi Morgari.
