Finita la visita al Birrificio Poretti, con Angelo (Oleg) e Rosella, sua moglie, siamo andati allo spaccio del cioccolato Lindt, perché avevamo voglia di farci un po' di male fisico, acquistando un po' del famosissimo e buonissimo cioccolato. Ma come nasce il cioccolato Lindt? Eccovi, la storia di un grande successo. Nel 1845 il pasticcere David Sprüngli apre a Zurigo con il figlio una piccola fabbrica di cioccolato. Nel 1859 Rudolf Sprüngli inizia a vendere la cioccolata in un nuovo negozio di pasticceria in Paradeplatz con un successo tale che nel 1870 inizia la produzione industriale in una fabbrica vicino alla stazione ferroviaria. Lindt[modifica | modifica wikitesto] Nel 1879, Rodolphe Lindt, figlio di un farmacista di Berna, acquista alcuni vecchi macchinari per la macinazione dei semi di cacao. Le macchine, recuperate da un mulino fallito, si dimostrano inadeguate e il cioccolato prodotto risulta poco appetibile. Con l'aiuto del fratello farmacista, viene inventato un sistema per rendere il cioccolato più morbido e vellutato, procedimento che chiamiamo oggi concaggio. Lindt lo chiama “chocolat fondant”, un cioccolato con la consistenza e gli aromi a cui siamo oggi abituati. La scoperta di quel procedimento avvenne per caso: Rodolphe lasciò involontariamente i macchinari accesi per 3 giorni e, al suo ritorno, notò la differenza sostanziale che la lavorazione continua apportò al prodotto. Nel 1892 Rudolf Sprüngli si ritira dall'attività, ma i suoi due figli continuano la tradizione: Johan Rudolf si occuperà della produzione e David Robert della vendita. Inaugurata nel 1899 una nuova fabbrica a Kilchberg, sul lago di Zurigo (dove tuttora vi è la sede), Johan Rudolf vuole anche acquisire i segreti di quel procedimento che rende il cioccolato dei Lindt così famoso. Per un milione e mezzo di franchi d'oro, cifra ragguardevole per quei tempi, acquista la fabbrica di Berna di Rodolphe Lindt e fonda la Lindt & Sprüngli. Nel nostro Paese, ma soprattutto in provincia di Varese, l'azienda è da sempre associata alla famiglia Bulgheroni. I fratelli Bulgheroni incontrano Robert Sprüngli in Italia nel 1946. In pieno dopoguerra e in difficoltà per il reperimento delle materie prime, decidono di convertire la loro fabbrica di caramelle fondata nel 1909 in fabbrica di cioccolato. Su licenza della Lindt, iniziano la produzione l'anno dopo e continuano ad espandersi fino ad aprire a Induno Olona. Nel 1993 la Bulgheroni SpA viene acquisita dall'azienda svizzera e diventa Lindt&Sprüngli SpA. Tre anni dopo, Antonio Bulgheroni, figlio di Edoardo e attuale presidente e amministratore delegato di Lindt Italia, entra a far parte del consiglio di amministrazione di Lindt & Sprüngli AG. Ancora oggi l'azienda, nonostante i cambi di mano societari, corre sul binario della tradizione e non smette di mantenere la propria identità. Perché l'importante non è chi guida la nave ma come e dove la si vuole condurre. Lo sa bene, Antonio Bulgheroni, meglio conosciuto come “Toto”, attualmente è Presidente e Amministratore delegato di Lindt & Sprüngli Italia, di diritto soprannominato: “re del cioccolato”, grazie alla sua capacità di aver saputo mantenere, nel quartiere generale di Induno Olona, l'anima varesina di un'azienda che ha saputo registrare, nei primi sei mesi del 2014, un incremento del 14,3% degli utili.
