Nel 1758 Luigi XV commissionò al celebre Architetto francese Jacques-Ange Gabriel la costruzione di due palazzi gemelli di fronte Place de la Concorde. Il risultato fu un Capolavoro dell'architettura del 18° secolo. Fu in questo edificio che fu stipulato il 6 febbraio 1778 il trattato franco-americano, ovvero la Dichiarazione d'Indipendenza degli Stati Uniti firmata da Benjamin Franklin e Arthur Lee per i tredici stati degli Stati Uniti, e Gérard Conrad per la Francia. Il Conte de Crillon acquistò uno dei due palazzi gemelli nel 1788. Nel 1907, la società francese Société des Grands Magasins des et Hôtels du Louvre acquistò il Palazzo Crillon, insieme a due edifici adiacenti lungo la Rue Boissy d'Anglas, al fine di creare il primo Grand Hotel di lusso di Parigi. La società incaricò l'architetto Destailleur di trasformare il complesso per soddisfare la nuova destinazione d'uso, avendo cura però di conservare i sontuosi decori del Palazzo storico ereditato dal precedente illustre proprietario. Destailleur eseguì questo delicato compito alla perfezione, conferendo al nuovo albergo un livello di comfort e di lusso che gli è valso una fama mondiale. L'11 marzo del 1909 l'Hôtel de Crillon ha ospitato la sua prima cena di gala ed il giorno successivo aprì le sue porte ai primi viaggiatori.
