L'origine di queste palline fritte, irrorate di miele e guarnite di frutta candita, sarebbe greca, come testimonierebbe la preparazione "loukoumades". Anche il nome struffoli deriverebbe dal greco "strongoulos" o "stroggulos" (di forma tondeggiante). La loro diffusione avvenne in epoca moderna grazie ai conventi napoletani, dove le suore li preparavano per offrirli come dono natalizio alle famiglie nobili che si erano distinte per atti di carità. Nel trattato di cucina di fine XVII sec. di Antonio Latini si cita come "strufoli o struffoli alla romana" l'odierna ricetta napoletana. Nel sud Italia esistono numerose varianti degli struffoli, ricordiamo che forse la più popolare è la cicerchiata. Secondo i golosi il vero struffolo deve essere piccolo, perché così aumenta la superficie di pasta che entra in contatto col miele.

Bellissima foto, ne traspare tutto l'infinito aroma della pasticceria napoletana, tanto rustica quanto saporita. L'unico appunto, in una fotografia perfetta, è che il pacchetto di farina rompe il quadretto casereccio: fa sembrare lo scatto uscito da una pubblicità! Anche perché la marca è ben visibile... avrei preferito dei gusci d'uova o, rimanendo nella farina, un cumuletto direttamente sul piano di lavoro oppure una ciotolina piena. A presto e ancora complimenti, per il resto è perfetta!
