Il primo giorno dell'anno, la mia prima proposta fotografica per il 2026 con il ciclista e sua moglie dietro che percorrano il pave della meravigliosa cittadina di Edam dove ogni volta che vado in Olanda mi piace passare un bel pomeriggio tra scrosci d'acqua, luce imperiosa e gli odori dei negozi che vendano il famoso formaggio e la loro fantastica senape una volta prodotta nei mulini a vento. Consiglio a tutti di venire a passeggiare qualche oretta in questo bel paesino non lontano da Amsterdam , da Marken e Monnickendam. Buona visione. EdamÂ è una cittadina di circa 7.000 abitanti dellaÂ costaÂ sud-orientale dell'Olanda SettentrionaleÂ , situata nella regione delÂ WaterlandÂ ed affacciata sulÂ Markermeer, il tratto meridionale dell'IJsselmeer. Dal punto di vista amministrativo, si tratta di un ex-comune, facente ora parte, insieme al villaggio diÂ Volendam, della municipalità diÂ Edam-Volendam. La località, un tempo porto diÂ pescatoriÂ per la caccia alleÂ balene, è nota a livello mondiale per l'omonimoÂ formaggio. Il villaggio di Edam fu fondato alla fine delÂ XII secoloÂ e sorse sulla diga di Ee, che collegava ilÂ fiumeÂ PurmereÂ con loÂ Zuiderzee. La località divenne un importante centro commerciale a partire dalÂ 1230, quando si iniziò lo sbarramento dei fiumi che sfociavano nello Zuiderzee. In seguito divenne anche sede doganale. NelÂ 1357, fu concesso ad Edam dal conte Guglielmo V d'Orange loÂ statusÂ di città. NelÂ 1573,Â Guglielmo d'OrangeÂ concedette ad Edam di avere unaÂ pesa pubblica, per i meriti dei suoi cittadini durante l'assedio di Alkmaar. La città fu devastata da incendi nelÂ 1587Â e nelÂ 1602. A partire dalÂ XVI secoloÂ e soprattutto dalÂ XVII secolo e fino alÂ XVII secolo, la località visse il suo periodo di massimo splendore, grazie soprattutto ai cantieri navali, alla pesca delle aringhe e all'industria casearia. Â Edam fu, in particolare, un importante porto di collegamento per i commerci con le Indie Orientali. NelÂ 1641, si stabilì ad Edam una comunità ebraica, che vi rimase però per breve tempo. Una nuova comunità diÂ EbreiÂ si stabilì poi nella cittadina a partire dalÂ 1722. Le principali attività economiche di Edam sono ora l'industria, la pesca, l'agricoltura e l'allevamento.

Idealmente, caro Francesco, passeggiamo con te, tra alberi e casette... e pare di sentirlo l'odore sprigionato dalle forme dell'Edam che accende le vetrine e gli interni bui delle botteghe con il vivo colore della sua pasta gialla e compatta. E viene voglia di addentarlo, sorseggiando una birra appena spillata, in silenzio, godendosi il rapimento e la pace del momento.
