Dedicato a San Donato, voluto da Ulderico Manfredi di Susa e da Alrico, vescovo di Asti, nato sulla carta nel 1024 allorché ne venne istituito il Capitolo, se ne ha la più antica menzione il 14 marzo 1044. La costruzione originaria, probabilmente di stile lombardo, durò relativamente poco: all'inizio del quattrocento l'edificio fu riedificato in forme gotiche, pare a cura della potente corporazione dei mercanti di lane. Nel periodo 1766-78 il gotico, "lo stile del cristianesimo" cede alla contaminazione barocca; l'altare maggiore è del 1781. I restauri iniziati nel 1885 intesero alleggerire le sovrastrutture barocche, per recuperare l'originaria forma gotica. Nel muro perimetrale del lato nord si costruirono le tre cappelle (qualcuno le definì "un assurdo architettonico") e l'ingresso laterale (le contrapposte cappelle del lato sud risalgono al 1904). La nuova facciata, la precedente si era staccata dal corpo della chiesa nel 1808 in seguito ad un terremoto, fu costruita nel 1886 "distruggendo completamente l'aspetto originario del tempio", e completata nel 1887 con ornati in terracotta rapportati a quelli degli edifici medievali di Pinerolo. Il campanile, datato 1425, è ancor oggi incompiuto: manca della guglia ("ciochè moc", lo chiamano affettuosamente i vecchi pinerolesi).
