Ci sono uomini che attraversano il tempo. Altri che lo seminano...Carlin, tu hai fatto entrambe le cose. ANCHE tra i ristoranti ci sono luoghi che hanno fatto la storia d'Italia e non sono solo il Cambio di Torino o il caffè Florian di Firenze. Qui a Bra, al numero 14 di una via che già nel nome, come è stato scritto mille volte, segnava un destino (via della Mendicità Istruita) infatti trent'anni fa la cooperativa i Tarocchi apriva l'osteria Boccondivino. Fu l'inizio di una rivoluzione maturata poi nel 1986 con la nascita di Arcigola poi Slow Food. Qui, nella stessa casa dell'osteria, ha la sua sede da sempre il movimento di Carlin Petrini e dei suoi amici che, proprio seduti ai tavoli del Boccondivino bevendo una delle bottiglie (non solo piemontesi) di una cantina sterminata, hanno segnato le tappe della storia dell'associazione che ha rivoluzionato l'idea di cibo e di agricoltura. E non solo in Italia. Qui è nata nel 1996 l'idea del Salone del Gusto e poi di Terra Madre. Qui ha mosso i primi passi l'Università di Scienze gastronomiche e l'intero progetto del complesso di Pollenzo. Qui è nata l'idea della Guida Osterie d'Italia. Qui continuano a venire, per incontrare "sua maestà" Petrini, politici e intellettuali, giornalisti e personaggi dello spettacolo. Qui, soprattutto, hanno educato palato e mente generazioni di golosi. Lo hanno fatto attorno a una della tavole delle tre belle stanze che al primo piano della casa "di ringhiera" ospitano l'osteria. E d'estate nel fresco cortile. Già perché il Boccondivino ha segnato una rivoluzione anche sul piano, più ristretto, della ristorazione. È stato il primo a lanciare l'idea che l'osteria (il vero archetipo del "mangiar fuori" degli italiani) poteva essere "nuova". Poteva unire tradizione e modernità, semplicità e qualità. Ed è riuscito, trent'anni dopo la partenza, a non diventare un'abitudine. Grazie Carlin e buon viaggio...
