Grazie mille a te per il commento! Penso che si tratti di muschio, che cresce anche in zone sfavorevoli come queste; è molto facile infatti osservare montagne e coni vulcanici coperti quasi interamente da muschio.
In questa specifica parte degli altopiani direi che di animali terrestri non ce ne sono, mentre i fiumi e i laghi sono ricchi di trote e salmerini alpini.
Negli altopiani del sud invece si possono incontrare tante pecore, lasciate libere di andare dove vogliono a partire da giugno (dato che non ci sono predatori) fino a settembre, quando vengono radunate e smistate dai pastori.
Di uccelli invece non ne ho visti, a parte alcune oche selvatiche e cigni in un'altra parte delle Highlands più verdeggiante, però immagino che ce ne siano.
Se ti interessa l'argomento anche solamente per curiosità puoi cercare le fotografie di Ragnar Axelsson, islandese che conosce bene la realtà di quei pastori.
