Una eccellenza che ha fatto grande la nostra cucina. Rilasciata nel 1915 dal genetista Nazareno Strambelli, presso il centro di ricerca per la cerealicoltura di Foggia. Fu dedicata al senatore Raffaele Cappelli, che alla fine dell'ottocento assieme al fratello Antonio aveva avviato le trasformazioni agrarie in Puglia. Il Cappelli è ancora oggi coltivato specialmente al sud, per la produzione di pasta di qualità superiore e pane e pizza biologici. Dagli anni 20 agli anni 50 fino al 60% della superficie nazionale a grano duro era investita dal cappelli. Il grano senatore Cappelli dagli inizi del secolo fino al 1960, ha rappresentato la base del miglioramento genetico del frumento duro, ed infatti è presente nel patrimonio genetico di quasi tutte le cultivar di grano duro.
