Capparis spinosa L. s.l. Piccolo arbusto alto fino a 80 cm; rami molto allungati, da decombenti ad ascendenti, legnosi nella porzione basale. Contrariamente a quanto si pensa, la parte edibile più conosciuta, che viene volgarmente detta "cappero", non è il frutto, bensì il bocciolo fiorale non ancora schiuso, che va presto raccolto perchè sboccerebbe nell'arco delle 24-48 ore successive alla sua comparsa. Anche il frutto è, comunque, commestibile. Foglie alterne, carnose, con breve picciolo portato all'ascella di 2 stipole spinescenti; lamina intera, verde-lucida su entrambe le facce, (ob-)ovato-tondeggiante, apice da ottuso a leggermente smarginato a debolmente mucronato, base variabile. I fiori, intensamente profumati, sono ermafroditi, inseriti singolarmente con un lungo peduncolo all'ascella delle foglie superiori. Essi hanno 4 sepali cocleariformi verdi-arrossati, caduchi, e 4 petali obovati, molto grandi, di colore bianco o bianco-roseo. Stami numerosi di colore violaceo verso l'apice, biancastri alla base; l'ovario è portato da un lungo ginoforo e contiene numerosi ovuli, lo stigma è sessile; la fioritura può protrarsi per diversi mesi: da maggio a settembre si formano bottoni floreali ad ogni ascella fogliare. I frutti, detti cucunci, sono delle bacche ovoidali-allungate o, più di rado, piriformi, dapprima verdi, e poi, a maturazione, rossicce; contengono molti semi reniformi di colore nerastro, immersi in una polpa appiccicosa. La fioritura avviene generalmente da maggio a giugno, ma, in condizioni favorevoli, può protrarsi fino a settembre. Specie spontanea dei Paesi che si affacciano al bacino del Mediterraneo; cresce in tutto il territorio italiano, ad esclusione della Val d'Aosta, e in alcune regioni, sfuggendo alla coltivazione, si è naturalizzato.
