Mi avevano parlato di un pastore con un piccolo gregge che avrei potuto contattare. Salivo verso Campo Imperatore con un numero di telefono in tasca, mentre la strada iniziava le sue contorsioni tra un mare erboso e mulinelli di pietre. Castel del Monte era ormai un ricordo, lasciato qualche centinaio di metri più in basso. Finché il passaggio venne ostruito dall'attraversamento di qualche decina di pecore con una figura umana a seguirle per ultima e un bastone tra le mani. Gli chiesi se si chiamasse Mario. Lui con gli occhi stretti, ormai non più di una fessura per il sole già alto, mi fece segno di sì. L'uomo ha poco più di quarant'anni, la pelle scura e uno sguardo apparentemente aspro come il paesaggio in cui è immerso. Ma è d'animo buono e percepisco quanto tenga a raccontare la sua storia. Lo stazzo è poche centinaia di metri più avanti. Qui sale con gli animali in estate. E' un luogo nascosto tra le gibbosità di questa montagna lunare, scarno e semplice. Sul fondo, una piccola baracca nella quale, di tanto in tanto, produce del formaggio per sé e le persone a lui care. Le pecore hanno poco latte nell'arsura di questa estate torrida, eppure lui si prodiga in ogni modo per averne quel tanto da condividere con me questa esperienza. Mario è figlio di questi luoghi, eppure è nato a Foggia, dove la sua famiglia si era spostata durante il periodo della transumanza. Il latte si scalda nel calderone di rame mentre mi racconta con vivida passione di quanto straordinario gli apparisse questo autunnale pellegrinaggio di uomini e capi che i suoi occhi hanno fatto giusto in tempo a vedere nelle ultime e faticose propaggini. Lo scambio di conoscenze, tradizioni, sapori arricchiva di senso e colore la vita di questi abitanti di terre remote, sempre a rischio di isolamento. L'emozione della vista del mare al termine di un viaggio che custodiva un'epica, era qualcosa in grado di colmare anche il cuore degli uomini dalla scorza più dura. Prima di aggiungere il caglio al latte ormai caldo, vedo Mario che con l'agitatore di legno traccia il segno della croce sui bordi del calderone. Un retaggio ancestrale di un tempo in cui si temeva che la sfortuna potesse impedire al latte di addensarsi, quando ogni piccola cosa assumeva un valore vitale e ci si appellava a qualunque conforto pur di preservarla. Il lavoro prosegue fino a che piccoli cestini di vimini si riempiono a dar forma a quello che qui chiamano, appunto, "canestrato". Gli chiedo, ingenuamente, come si trovi a trascorrere molto tempo in solitudine e lui mi risponde che, in realtà, la montagna è ormai divenuta un immenso parco divertimenti da cui, ovunque, sbucano turisti della più disparata specie. " Mi capita spesso di voler restare solo e non riuscirci ". Anche la qualità delle pecore è cambiata con il tempo. Oggi il mercato richiede con prepotenza agnelli più robusti e carnosi. Questo ha portato ad introdurre specie aliene, con una difficoltà sempre crescente a coniugarle con le condizioni dure di questi territori, spesso avidi di acqua. L'ultimo regalo che il latte ricco di grassi ci concede, è la ricotta. Mario me ne offrirà una con cui, ore dopo, preparerò un bel piatto di pasta e avrà il sapore prepotente e dimenticato delle cose autentiche. Due uomini, quasi coetanei, dai percorsi apparentemente così lontani e diversi, tra il sole ed il vento che popolano le asperità di questa mitica montagna, si sono scoperti amici sinceri, anche se solo per un giorno. Come sempre è la strada a metterci sul sentiero degli incontri di cui si compongono le nostre esistenze.
