Un piccolo paese il cui concentrico si sviluppa in lunghezza ed è dominato dalla Chiesa Parrocchiale neogotica, che si staglia con imponenza sul punto più alto della collina. L'alto campanile (40 metri) risalente ai primi del '900, contraddistingue Priocca da lontano. L'area di Priocca risuta abitata sin dalla preistoria dai ligurim insediatisi un po' ovunque su queste colline. Si pensa che il primo nucleo abitato sia stato il Colle della Stella, situato sulla strada che porta da Alba ad Asti, in posizione soleggiata. Il Colle della Stella sorgeva nei pressi della decima pietra miliare e da questo, forse, deriva il nome Petra Ducia, trasformatosi poi in Priocca. Secondo alcuni studiosi, il nome attuale deriverebbe da "Pè dla Roca", e cioè ai piedi della collina in Valle Pometto, luogo in cui era situato l'abitato dopo le invasioni saracene. In epoca alto-medievale si forma un nucleo abitato nei pressi della Pieve di san Vittore, della quale oggi rimane l'abside in stile romanico: è questa l'opera di maggior valore artistico e culturale esistete sul territorio. Più tardi, tra il 1000 e il 1200, un nuovo centro, la "villa", sorge su di un'altura attorno ad un castello: le sue caratteristiche di vero e proprio borgo, cinto di mura e protetto da un fossato, porteranno lentamente al progressivo allontanamento della popolazione dall'antico insediamento. Possesso dei Roero già nel XIV secolo, giungerà, per acquisto, ai Damiano di Asti, cui Priocca rimarrà fino alla soppressione dei diritti feudali. Il comune acquistò il castello dagli eredi dei Damiano e lo abbatté in parte, ricavandone la piazza. Vigneti: principalmente Barbera e Nebbiolo.
