La razza Chianina è tra le più antiche del mondo. E' allevata da almeno 22 secoli (Virgilio ne sottolineava la bellezza) nella media valle del Tevere e nella Val di Chiana, da dove l'allevamento si è esteso alle province di Arezzo, Firenze, Livorno, Pisa, Siena e Perugia. La Chianina è caratterizzata da gigantismo somatico (è la più grande delle razze bovine conosciute nel mondo), nei tori adulti raggiunge i 2 metri di altezza al garrese e supera i 17 quintali di peso (le femmine 10). In passato era una razza a duplice attitudine (carne e lavoro). Oggi è la seconda razza da carne in Italia. Ottima adattabilità al pascolo in diverse condizioni perché ottima utilizzatrice dei foraggi e resistente alle malattie ed agli ectoparassiti. L'Associazione Nazionale Allevatori Bovini Italiani Carne A.N.A.B.I.C. gestisce, dal 1966, i libri genealogici delle razze bianche italiane (Chianina, Romagnola, Marchigiana, Maremmana, Podolica). Sito web: www.anabic.it Il mantello è di colore bianco porcellana in entrambi i sessi. Nel maschio presenza di peli neri nel treno posteriore (sfumature grigie). A volte peli neri attorno agli occhi. I vitelli dalla nascita a 4-6 mesi sono fromentini. Musello, lingua, palato e aperture naturali pigmentate nere. Testa leggera ed elegante, più allungata nelle vacche, con fronte ampia nei tori. Collo di media lunghezza e provvisto di scarsa giogaia. Corna medio corte e grossolane, nere in punta. Gli arti lunghi, ma robusti e con ottimi appiombi; piede un poco piccolo ma con unghioni duri e resistenti (caratteristica importante per il lavoro). La pelle è sottile e pigmentata. Ottima qualità della carne (marezzate e tenere). La produzione di latte è appena sufficiente per il vitello. Oggi la selezione è orientata verso la precocità di sviluppo e il maggior rendimento di carne dei tagli più pregiati (soprattutto la regione dorso-lombare dalla quale si ottengono le rinomate bistecche alla fiorentina).
