Fabio è un casaro di malga. E' la sua vita da oltre 50 anni. Produce formaggi dal latte delle sue paciose mucche. Trascorre le estati in compagnia della moglie nell'alto dei monti di un passo a cavallo tra le province di Trento e Vicenza, dove gli alberi ormai iniziano a farsi radi e l'altopiano è illuminato dalle trasparenze turchesi di un piccolo e sorprendente lago. "Pascolano al sole e all'asciutto", mi dice, "e trovano la vegetazione che nasce solo in quelle condizioni, fiori ed essenze pregiate. Sono queste a donare al latte la dolcezza che ritroviamo nei formaggi ". Trascorro con lui una mattina tiepida e assolata.
