Una pietanza dalle origini Medievali, quando a Palermo era presente una rigogliosa comunità Ebraica che la ideò, allontanata nel 1492 dal Re Federico II d'Aragona detto “Il Cattolico”. Consiste in una “vastedda”, ossia una pagnotta spolverata di sesamo, “meusa”, ossia milza fritta nello strutto (sugna) insieme ad altre interiora bovine in una pentola di rame rigorosamente inclinata, pepe e limone. Ne esistono due varianti: “Schietto”(celibe) e “Maritato”(sposato) : il primo condito solamente con limone e pepe, il secondo condito anche con caciocavallo a scaglie o ricotta. Nel 1800 nacquero le prime focaccerie, tra tutte l'Antica Focacceria San Francesco, luogo dello scatto e la più famosa e conosciuta in tutta Italia. Palermo è stata eletta capitale europea del cibo da strada, e questo scatto vuole essere un tributo al cibo maggiormente rappresentativo dello street food palermitano.
